I have to admit that as a Type A person, there’s nothing I love more than a solid routine. That’s why I think I look forward to Sunday meal prep. My breakfasts each week are pretty standard: a smoothie with leafy greens, fruit, spices, and protein powder. As long as I’m not traveling, breakfast usually follows the plan. I’m never in my apartment without some kind of leafy green and frozen fruit. As you know, sometimes rules are meant to be broken.
A few weeks ago, I returned from a trip late at night and had work early in the morning. I had to quickly come up with an idea for breakfast, because the thought of sitting at a desk for several hours and trying to make it until lunch was far from appealing to me. With the lack of healthy options around my office, I decided I would be much better off improvising at home. I opened my pantry to see what (if anything) had good breakfast potential. I had some vanilla protein powder, bananas and avocado. It wasn’t much, but I thought I could make do. I’ve had chocolate avocado pudding before, so I thought that I could try adding the avocado to my smoothie for texture. The sweetness from the banana would likely mask the flavor of the avocado. I put everything in my blender and let it whirl. Long behold, after about 1 minute, I had the ultimate smoothie. It was so thick that I had to eat it with a spoon! It was creamy from the avocado and sweet from the banana. I didn’t miss my leafy greens at all. (Although I did make sure to throw in an extra serving at dinner the next night!)

The Ultimate Smoothie
1 serving vanilla protein powder
1/4 cup water
1 tsp maca powder (optional)
Blend all ingredients together until smooth.
