If I could eat pancakes every day, I would. There’s just something about them that makes them so comforting! I love making pancakes for breakfast, but they can be just as great for dinner! Tonight, I made savory pancakes with quinoa flour. They work as a fantastic side dish. I enjoyed mine along with black beans, roasted butternut squash and avocado!

Quinoa flour is new to my arsenal, and I am sure that it is here to stay. After trying out the quinoa flour sent to me from Namaste Foods, I’ve decided that I have to keep it around for several reasons. Quinoa flour is a great source of plant protein. I love switching up my grains and pseudograins, so this flour is a nice option when I’m in the mood for something bready. It’s also top 8 free, which relieves loads of anxiety for me!

Savory Quinoa Pancakes 
makes 2 pancakes

1/4 cup quinoa flour
1/2 tbsp nutritional yeast
1/4 tsp smoked paprika
1 tsp Italian seasoning
1/4 cup water
Olive oil for pan

Mix dry ingredients together and add water. Stir until completely mixed. Heat pan to medium-high heat and pour 1/2 of batter into the pan. Cook for 2-3 minutes on each side. Serve immediately.
