Looking for the perfect allergy-friendly pancake mix? Namaste Foods has a delightful mix for all of your Sunday brunch feels.


Ever since I was little, I can remember having homemade pancakes at least once a week. The softness of the pancake drizzled with syrup was-and still is- pure bliss.

I was excited to try out this pancake mix that was graciously sent to me from Namaste Foods for several reasons. First of all, it’s top 8 free, which is a relief to me since I have several food allergies. Secondly, the instructions were very simple: add eggs, oil, and water/non-dairy milk. I can handle that! In addition, it’s non-GMO, and I prefer to cook with organic and non-gmo products in my home.

I spent some time thinking about what flavors would go well with this mix and lemon and blueberry came to mind! The tartness of the lemon paired with the sweetness of the blueberry seemed a like a refreshing weekend morning breakfast.



Blueberry Lemon Pancakes (makes 6 pancakes)


1 cup Namaste Waffle & Pancake Mix
1 egg
1 tbsp coconut oil
1/3 cup water or non-dairy milk
2 lemons
1/4 cup frozen blueberries


Mix together egg, coconut oil, and water. Add the pancake mix and stir until smooth. Add in zest of one lemon.

Bring pan to medium heat and spray with coconut oil.

Pour batter into pan. I used roughly 2 tbsp of batter for each pancake.

Cook for about 2-3 minutes and flip to cook the other side.

While pancakes are cooking, microwave frozen blueberries for approximately 30 seconds or until warm. Mash berries with a fork.

Pour blueberry sauce on top of finished pancakes. Top with more lemon zest.
