Food that comes in some sort of wrap is always more fun to eat. I love to make my own nori wraps at home. They are easy to make and I love to roll a few and store them in the fridge for later! My favorite combination is below.
Vegetable Nori Rolls (serves one)
4 sheets of raw nori
3 whole carrots cut in vertical halves
1/2 cucumber cut in vertical quarter
1 white sweet potato
Coconut aminos (for dipping)
Begin by roasting the sweet potato or microwaving it for 5 minutes. Let the sweet potato cool. Place 1/2 carrot and 1/4 cucumber into the nori wrap. Scoop ~2 tbsp of sweet potato into the roll. Use water to seal the nori roll. Place in the refrigerator for at least 1 hour and enjoy!
