Carrots are one of my favorite vegetables and I will eat them almost any kind of way. During the holidays, I love to roast a few pounds of carrots. They’re pretty easy to work with and I love the roasted flavor they take on in the oven.

Oven Roasted Carrots

2 lbs whole carrots (rainbow carrots are great too!)
3 tbsp coconut oil

Directions: Melt coconut oil by microwaving it for 30 seconds or letting it sit out in the kitchen if it’s 76 degrees or warmer. Slice carrots in half vertically and massage them in coconut oil and place in a baking dish. Bake carrots at 425 for about 30 minutes or until the edges start to turn light brown.
