These two ingredient pancakes are perfect post-workout. I always have bananas and eggs around so even when I need to make a grocery run, I can usually still throw these together. Best of all, these pancakes are free of 7 of the top 8 major allergens.

Banana Egg Pancakes (1 serving/3 pancakes)
1 Egg
1 banana
1 tsp vanilla extract
A few dashes of cinnamon
Toppings: raw cacao nibs, coconut flakes, etc.
Coconut oil for pan

Directions: Mash the banana with a fork. Add egg and spices to the mixture. Spray pan or skillet with coconut oil. Pour batter into pan.
