As much as I love pancakes, I tend to stick to smoothies for breakfast during the week. I can make them the night before and drink them on the go or at my desk at work! I came up with this recipe a few weeks ago and just had to share!
Mango Co-yo Smoothie (serves one)
3/4 cup diced mango
1 cup leafy greens (spinach, arugula, etc.)
1/4 cup unsweetened coconut yogurt
1 scoop unsweetened plant-based protein powder (optional)
1/2 cup – 1 cup of water
I love smoothies that are thick enough to be eaten with a spoon. Just add more water if you would like a thinner consistency!
